SeaPak Poptoberfest Giveaway and Review
My apologies for the delay to post this but I was sick. For the first time, SeaPak has launched the Poptoberfest festival, a family program that is currently being held during the month of October. To celebrate Poptoberfest, I was given a package of SeaPak Popcorn Fish and Popcorn Shrimp to try and my favorite is the Popcorn Shrimp but I like both about the same. The Popcorn Fish are delicious with chips or even on their own and the Popcorn Shrimp are succulent and tasty just like the ones at restaurants! SeaPak Popcorn Fish and Popcorn Shrimp changes the everyday routine to family fun during dinner and kids love them! I love the different dinners/recipes you can prepare with them. The following is my easy recipe:
Guacamole Popcorn Shrimp Tacos:
2 (12 oz) packages of SeaPak Popcorn Shrimp
8-10 flour tortillas, heated according to package directions
14 oz bag or head of iceberg lettuce
8 oz white cheddar cheese, shredded
8 oz sour cream
Guacamole (if desired):
2 avocados
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 ripe tomato, chopped
- 1 lime, juiced
- salt and pepper to taste
Peel and mash avocados in a medium serving bowl. Stir in onion, garlic, tomato, lime juice, salt and pepper. Season with remaining lime juice and salt and pepper to taste. Chill for half an hour to blend flavors
BAKE shrimp according to package directions.
COMBINE guacamole ingredients.
SPREAD a tablespoon of guacamole and sour cream over each warm tortilla with lettuce, cheese, and top with cooked shrimp.

Baby It’s You! - Momma said there would be days like this!
I was recently invited to a Blogger night to watch the Broadway Musical, Baby It’s You! There was an amazing reception at the Paramount Hotel Library Bar before the show with cocktails and hors d’oeuvres. We all mingled and prepared for the musical in the swanky Paramount Hotel Library Bar. It was conveniently a block away from the Broadhurst Theatre. The Paramount Hotel Library Bar is the perfect place for a romantic rendezvous with its serene setting. It is also the perfect place to kick back with a tasty libation and a book.
Baby It’s You! is the true story of a New Jersey housewife who launched the 1960s girl-group The Shirelles with Tony Award winner Beth Leavel who plays Florence Greenberg. Beth Leavel received a Best Actress Tony Award nomination for her performance in Baby It’s You!
The top notch musical, using pop hits of the period, was conceived by Floyd Mutrux and is directed by Mutrux and Sheldon Epps, and written by Tony-nominated book writers Mutrux and Colin Escott, the team behind another jukebox Broadway show, Million Dollar Quartet. I loved the show! It was amazing and it amused every audience member. All generations can appreciate the show especially the baby boom generation. I wish my mother would be there as she would have loved listening to the pop hits of the period. I never wanted it to end! Beth Leavel, Allan Louis and Geno Henderson were standouts! I would go again in a heartbeat! Expect such classics as “Dedicated to the One I Love,” “Duke of Earl,” “He’s So Fine,” “I Say a Little Prayer,” “It’s My Party,” “Louie Louie,” “Mama Said,” “Shout,” “Sixteen Candles,” “Stop in the Name of Love,” “Twist and Shout” and many more. I am dissapointed with the bad reviews since I thought the Baby It’s You! musical was fabulous! It would also make the perfect mother’s day gift!
Here’s how producers bill the show: “Before Motown and the British Invasion, Florence Greenberg took the male-dominated music industry by storm, revolutionizing pop music and becoming the most influential and successful female record company president ever. After discovering one of the greatest girl-groups of all time, The Shirelles, at her daughter’s high school, Greenberg packed the girls in her car, drove across the George Washington Bridge to New York City, and embarked on a trailblazing journey from New Jersey housewife to record mogul, creating the independent house of hits that was Scepter Records.”
